No. They receive a link, open the document, sign it and submit. That is the whole thing. The completion record still names them, timestamps the signature and logs the IP address it came from.

Can I make sure the right person signed?

To a point, and it is worth being honest about which point. Email delivery plus a one-time code sent to their phone raises the bar a long way; a full identity check with a government ID raises it further and is available where a document justifies it. No electronic method proves who held the phone, which is why the audit trail records what was actually observed rather than claiming more.

Certain document types carry their own formalities wherever you are: deeds, wills, some property instruments, and anything requiring a witness or a notary.
